Ingredients:

  • 2 slices of whole-grain or sourdough bread
  • 1 ripe avocado
  • 2 large eggs
  • 1 tablespoon olive oil (optional)
  • Salt and pepper to taste
  • Optional toppings: red pepper flakes, lemon juice, fresh herbs (like cilantro or parsley)

Instructions:

  1. Toast the Bread:
    • Toast the slices of bread until they are golden and crispy.
  2. Prepare the Avocado:
    • While the bread is toasting, cut the avocado in half, remove the pit, and scoop out the flesh into a bowl.
    • Mash the avocado with a fork until smooth (or leave it slightly chunky, if you prefer).
    • Add a pinch of salt, pepper, and a squeeze of lemon juice (optional) to enhance the flavor.
  3. Cook the Eggs:
    • Heat a small skillet over medium heat with a little olive oil or butter.
    • You can cook the eggs to your liking:
      • Fried Eggs: Crack the eggs into the skillet and cook until the whites are set and the yolk is still runny (for a sunny-side-up style).
      • Poached Eggs: Bring a small pot of water to a gentle simmer, add a splash of vinegar, and carefully crack the eggs into the water. Cook for 3-4 minutes until the whites are set but the yolk is still soft.
