KOREAN BEEF BOWLS WITH RICE AND VEGETABLES

Ingredients:

For the Beef Marinade:

  • 1 pound ground beef (or thinly sliced beef)
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon red pepper flakes (optional, for heat)

For the Bowls:

  • 2 cups cooked rice (white or brown)
  • 1 cup broccoli florets
  • 1 cup carrots, julienned or sliced
  • 1 bell pepper, sliced
  • 1 cup snap peas (optional)
  • 2 tablespoons vegetable oil
  • Sesame seeds (for garnish)
  • Green onions, sliced (for garnish)

Instructions:

Step 1: Marinate the Beef

  1. Combine Marinade: In a bowl, mix together the soy sauce, brown sugar, sesame oil, garlic, ginger, and red pepper flakes.
  2. Marinate: Add the ground beef (or sliced beef) to the marinade and mix well. Allow it to marinate for at least 30 minutes (or up to overnight in the refrigerator).

Step 2: Cook the Beef

  1. Cook the Beef: In a large skillet or wok over medium-high heat, add the marinated beef and cook until browned and cooked through, about 5-7 minutes. If using sliced beef, stir-fry until just cooked.

Step 3: Stir-Fry the Vegetables

  1. Stir-Fry: In another pan, heat vegetable oil over medium-high heat. Add the broccoli, carrots, bell pepper, and snap peas (if using). Stir-fry for about 3-5 minutes until the vegetables are tender-crisp.

Step 4: Assemble the Bowls

  1. Serve: In bowls, add a portion of cooked rice. Top with the cooked beef and a generous portion of the stir-fried vegetables.
  2. Garnish: Sprinkle with sesame seeds and sliced green onions for extra flavor and crunch.

Tips:

  • For a quicker meal, you can use pre-packaged stir-fry vegetables.
  • Adjust the vegetables according to your preferences or what you have on hand.

Variations:

  • Spicy Option: Add gochujang (Korean chili paste) to the marinade for a spicy kick.
  • Add Egg: Top the bowls with a fried or poached egg for added richness.
