Ingredients:
- 2 cups cooked chicken breast, diced or shredded (grilled or rotisserie works great)
- 1 large avocado, diced
- 1 cup cherry tomatoes, halved
- ½ cucumber, diced
- ¼ red onion, finely sliced
- 2 cups mixed greens (or romaine lettuce)
- ¼ cup fresh cilantro or parsley, chopped (optional)
- 1 tbsp olive oil
- 1 tbsp lemon or lime juice
- Salt and pepper to taste
Instructions:
- Prepare the salad: In a large bowl, combine the chicken, avocado, cherry tomatoes, cucumber, red onion, and mixed greens.
- Dress the salad: Drizzle the olive oil and lemon (or lime) juice over the salad. Season with salt and pepper, and gently toss everything together.
- Serve immediately: Enjoy as a main dish or a side.
Tips:
- For extra flavor, add a sprinkle of crumbled feta or shredded cheese on top.
