CHICKEN AND AVOCADO SALAD

Ingredients:

  • 2 cups cooked chicken breast, diced or shredded (grilled or rotisserie works great)
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, finely sliced
  • 2 cups mixed greens (or romaine lettuce)
  • ¼ cup fresh cilantro or parsley, chopped (optional)
  • 1 tbsp olive oil
  • 1 tbsp lemon or lime juice
  • Salt and pepper to taste

Instructions:

  1. Prepare the salad: In a large bowl, combine the chicken, avocado, cherry tomatoes, cucumber, red onion, and mixed greens.
  2. Dress the salad: Drizzle the olive oil and lemon (or lime) juice over the salad. Season with salt and pepper, and gently toss everything together.
  3. Serve immediately: Enjoy as a main dish or a side.

Tips:

  • For extra flavor, add a sprinkle of crumbled feta or shredded cheese on top.
  • Serve with whole-grain toast or pita bread for a complete meal.
