CAJUN SHRIMP AND GRITS

Ingredients:

For the Shrimp:

  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil or butter
  • 1 tbsp Cajun seasoning (adjust to taste)
  • 2 cloves garlic, minced
  • ½ lemon, juiced
  • Salt and pepper to taste

For the Grits:

  • 1 cup grits (quick-cooking or stone-ground)
  • 4 cups water or chicken broth
  • 1 cup shredded sharp cheddar cheese (optional)
  • 2 tbsp butter
  • Salt and pepper to taste
  • ¼ cup heavy cream or milk (optional, for extra creaminess)

Instructions:

Prepare the Grits:

  1. In a medium saucepan, bring water or broth to a boil. Slowly whisk in the grits.
  2. Reduce heat to low, cover, and simmer, stirring occasionally, for about 5-7 minutes (or according to package instructions) until thick and creamy.
  3. Stir in the butter, cheese, and cream or milk (if using). Season with salt and pepper to taste. Set aside and keep warm.

Cook the Shrimp:

  1. While the grits are cooking, toss the shrimp with Cajun seasoning.
  2. In a large skillet, heat olive oil or butter over medium heat. Add garlic and cook until fragrant, about 1 minute.
  3. Add the shrimp and cook for 2-3 minutes on each side or until pink and opaque.
  4. Squeeze lemon juice over the shrimp and season with salt and pepper as needed.

Serve:

  1. Spoon the creamy grits onto plates, then top with the Cajun shrimp.
  2. Garnish with fresh herbs like parsley or green onions if desired.

Tips:

  • Add a side of sautéed greens (like spinach or kale) for extra flavor and nutrition.
  • If you like it extra spicy, sprinkle cayenne pepper on the shrimp.
