For the Tilapia:
- 4 tilapia fillets
- 2 tbsp butter (or olive oil)
- 2 tbsp lemon juice (freshly squeezed)
- 2 cloves garlic, minced
- 1 tsp paprika
- Salt and pepper to taste

For the Rice:
- 1 cup white or brown rice
- 2 cups water or broth (for added flavor)
- 1 tbsp butter (optional)
- Salt, to taste
Instructions:
Prepare the Rice:
- Cook the rice: In a medium saucepan, bring water or broth to a boil. Add the rice and a pinch of salt. Reduce the heat to low, cover, and simmer until the rice is tender (about 15 minutes for white rice, 40-45 minutes for brown rice).
- Fluff the rice: Once cooked, remove from heat and let it sit, covered, for a few minutes. Fluff with a fork and stir in butter if desired.
Cook the Tilapia:
- Season the fish: Pat the tilapia fillets dry with paper towels. Season both sides with salt, pepper, and paprika.
- Sauté the fish: In a large skillet, melt the butter (or heat olive oil) over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Cook the tilapia: Place the tilapia fillets in the skillet and cook for about 3-4 minutes on one side. Flip the fillets, add lemon juice, and cook for an additional 2-3 minutes, or until the fish flakes easily with a fork.
Serve:
- Serve the lemon butter tilapia over a bed of rice. Garnish with lemon wedges and fresh parsley if desired.
