MANGO AND BLACK BEAN WRAP

Ingredients:

  • 1 large mango, peeled and diced
  • 1 cup black beans, drained and rinsed
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon chili powder (optional for a bit of heat)
  • Juice of 1 lime
  • Salt and pepper to taste
  • 4 large whole-wheat tortillas
  • 1 cup fresh spinach or mixed greens
  • Optional toppings: sliced avocado, crumbled feta, or Greek yogurt

Instructions:

  1. Prepare the filling: In a large mixing bowl, combine the diced mango, black beans, red bell pepper, red onion, and cilantro. Sprinkle with cumin, chili powder (if using), lime juice, salt, and pepper. Toss gently to mix all the ingredients well.
  2. Assemble the wraps: Lay a tortilla on a flat surface. Place a handful of spinach or mixed greens in the center. Spoon a generous portion of the mango and black bean mixture over the greens.
  3. Add optional toppings if desired, such as avocado slices, crumbled feta, or a dollop of Greek yogurt for extra creaminess.
  4. Wrap it up: Fold in the sides of the tortilla, then roll it up tightly from the bottom. Slice in half if desired.
