BREAKFAST PIZZA

Ingredients:

  • 1 pre-made pizza dough (store-bought or homemade)
  • 4 large eggs
  • 1/2 cup shredded mozzarella or cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 4 slices of bacon, cooked and crumbled (or sausage, ham, or plant-based alternative)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced cherry tomatoes
  • 1/4 cup sliced green onions or red onions
  • Olive oil (for brushing)
  • Salt and pepper, to taste
  • Fresh herbs (basil, parsley) for garnish (optional)

Instructions:

  1. Preheat the oven to 220°C (425°F).
  2. Roll out the pizza dough onto a baking sheet or pizza stone. Brush the dough with a little olive oil for extra crispiness.
  3. Precook the dough for about 5-7 minutes in the oven, just until it starts to firm up but not fully brown.
  4. While the dough is precooking, prepare the toppings:
    • Cook the bacon or sausage (or use pre-cooked plant-based alternatives).
    • Dice the veggies (bell peppers, tomatoes, onions).
  5. Remove the dough from the oven and sprinkle the mozzarella and Parmesan cheese evenly over the surface.
  6. Create small wells in the cheese (4 wells if making 4 eggs) and crack an egg into each well.
  7. Sprinkle the bacon, bell peppers, tomatoes, and onions around the eggs, avoiding covering the yolks.
  8. Season with salt and pepper, and return the pizza to the oven.
  9. Bake for 10-12 minutes until the eggs are set to your liking and the crust is golden and crispy.
  10. Garnish with fresh herbs, and serve warm.

Tips:

  • For a creamier base, you can spread a thin layer of ricotta or cream cheese on the dough before adding the toppings.
  • If you prefer scrambled eggs, scramble them lightly before adding them to the pizza.
  • You can experiment with toppings like spinach, mushrooms, or avocado slices after baking.

  • Vegetarian: Skip the bacon or sausage and load up with extra veggies like spinach, mushrooms, and zucchini.
  • Mexican-style: Use salsa as the base, top with black beans, avocado, and jalapeños.
  • Sweet and Savory: Add caramelized onions and a drizzle of maple syrup or honey over the bacon.
