Ingredients:
- 1 pre-made pizza dough (store-bought or homemade)
- 4 large eggs
- 1/2 cup shredded mozzarella or cheddar cheese
- 1/4 cup grated Parmesan cheese
- 4 slices of bacon, cooked and crumbled (or sausage, ham, or plant-based alternative)
- 1/2 cup diced bell peppers
- 1/2 cup diced cherry tomatoes
- 1/4 cup sliced green onions or red onions
- Olive oil (for brushing)
- Salt and pepper, to taste
- Fresh herbs (basil, parsley) for garnish (optional)
Instructions:
- Preheat the oven to 220°C (425°F).
- Roll out the pizza dough onto a baking sheet or pizza stone. Brush the dough with a little olive oil for extra crispiness.
- Precook the dough for about 5-7 minutes in the oven, just until it starts to firm up but not fully brown.
- While the dough is precooking, prepare the toppings:
- Cook the bacon or sausage (or use pre-cooked plant-based alternatives).
- Dice the veggies (bell peppers, tomatoes, onions).
- Remove the dough from the oven and sprinkle the mozzarella and Parmesan cheese evenly over the surface.
- Create small wells in the cheese (4 wells if making 4 eggs) and crack an egg into each well.
- Sprinkle the bacon, bell peppers, tomatoes, and onions around the eggs, avoiding covering the yolks.
- Season with salt and pepper, and return the pizza to the oven.
- Bake for 10-12 minutes until the eggs are set to your liking and the crust is golden and crispy.
- Garnish with fresh herbs, and serve warm.

- For a creamier base, you can spread a thin layer of ricotta or cream cheese on the dough before adding the toppings.
- If you prefer scrambled eggs, scramble them lightly before adding them to the pizza.
- You can experiment with toppings like spinach, mushrooms, or avocado slices after baking.
