Chicken Fried Steak Recipe
Ingredients:
For the Steak:
- 2 beef cube steaks (about 1/2 inch thick)
- 1 cup all-purpose flour (for dredging)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 1 tablespoon milk
- Vegetable oil (for frying)
For the Gravy:
- 1/4 cup all-purpose flour (for gravy)
- 2 cups milk
- Salt and pepper to taste
Instructions:
- Prepare the Steak:
- If the cube steaks are not tenderized, you can use a meat mallet to pound them slightly.
- In a shallow bowl, mix together the flour, garlic powder, onion powder, paprika, salt, and black pepper.
- Set Up the Dredging Station:
- In another shallow bowl, whisk together the eggs and milk.
- Place the seasoned flour mixture next to the egg mixture.
- Dredge the Steak:
- Dip each cube steak first into the flour mixture, coating it completely. Shake off any excess.
- Next, dip it into the egg mixture, allowing any excess to drip off.
- Finally, return the steak to the flour mixture, coating it again thoroughly. Set aside on a plate.
- Fry the Steak:
- In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat.
- Once the oil is hot (you can test it by dropping in a small piece of flour; it should sizzle), carefully add the breaded steaks to the skillet.
- Cook for about 3-4 minutes on each side, or until golden brown and cooked through. You may need to do this in batches to avoid overcrowding the pan.
- Once cooked, transfer the steaks to a paper towel-lined plate to drain excess oil.
- Make the Gravy:
- In the same skillet, reduce the heat to medium. Remove excess oil, leaving about 2-3 tablespoons in the pan.
- Whisk in the 1/4 cup of flour, scraping up any browned bits from the bottom of the skillet. Cook for 1-2 minutes until the flour is lightly browned.
- Gradually whisk in the milk, stirring constantly until the gravy thickens (about 3-5 minutes).
- Season with salt and pepper to taste.
- Serve:
- Serve the chicken fried steak hot, topped with the creamy gravy. It pairs well with mashed potatoes, green beans, or biscuits.
Tips:
- For added flavor, you can mix some hot sauce into the egg mixture or the gravy.
- Make sure the oil is hot enough before frying to ensure a crispy crust.
