Grilled Lemon Garlic Chicken with Vegetables Recipe

Ingredients:

  • For the Chicken:
    • 4 boneless, skinless chicken breasts
    • 3 tablespoons olive oil
    • 3 garlic cloves, minced
    • Juice of 1 lemon
    • 1 teaspoon lemon zest
    • 1 teaspoon dried oregano (or fresh)
    • Salt and pepper to taste
  • For the Vegetables:
    • 2 zucchinis, sliced
    • 1 red bell pepper, sliced

Instructions:

  1. Marinate the Chicken:
    • In a small bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
    • Place the chicken breasts in a large resealable bag or shallow dish, pour the marinade over them, and coat the chicken well. Let it marinate in the fridge for at least 30 minutes (or up to 2 hours for more flavor).
  2. Prepare the Vegetables:
    • While the chicken is marinating, prepare the vegetables. Toss the sliced zucchini, bell peppers, and carrots in olive oil, salt, pepper, and Italian herbs (if using).
  3. Grill the Chicken:
    • Preheat the grill to medium-high heat (or use a grill pan on the stovetop).
    • Remove the chicken from the marinade and grill each breast for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through. Discard any remaining marinade.
  4. Grill or Roast the Vegetables:
    • You can grill the vegetables alongside the chicken for about 3-4 minutes per side, or roast them in the oven at 400°F (200°C) for 20-25 minutes until tender and slightly charred.

  • If you don’t have a grill, you can cook the chicken on a stovetop grill pan or bake it in the oven at 375°F (190°C) for 20-25 minutes.
