1 cup mixed vegetables (zucchini, bell peppers, eggplant, mushrooms, etc.), sliced
1 tablespoon olive oil

2 ounces mozzarella or provolone cheese, sliced

Instructions:
Step 1: Prepare the Vegetables
Grill the Vegetables: Heat a grill pan or outdoor grill over medium-high heat. Toss the sliced vegetables with olive oil, salt, pepper, and Italian seasoning.
Grill the vegetables for about 5-7 minutes, turning occasionally until they are tender and have nice grill marks. Remove from heat.
Step 2: Assemble the Panini
Layer Ingredients: On one slice of bread, layer the grilled vegetables, followed by the cheese and fresh basil leaves, if using. Top with the second slice of bread.
Optional Drizzle: For added flavor, drizzle some balsamic glaze on the vegetables before closing the sandwich.
Step 3: Grill the Panini
Preheat a panini press or a skillet over medium heat. If using a skillet, you can place a heavy skillet on top of the panini to press it down.
Grill the Panini: Place the assembled sandwich in the press or skillet. Cook for about 3-5 minutes, or until the bread is golden brown and crispy and the cheese is melted. If using a skillet, flip the sandwich halfway through.
Step 4: Serve
Remove the panini from the heat, slice in half, and serve warm.
