MEATLOAF

Ingredients:

  • For the Meatloaf:
    • 1 1/2 pounds ground beef (80/20 is ideal for flavor and moisture)
    • 1 cup breadcrumbs (or crushed crackers)
    • 1/2 cup milk
    • 1/2 cup chopped onion
    • 1/2 cup chopped bell pepper (optional)
    • 2 large eggs
    • 2 tablespoons Worcestershire sauce
    • 2 teaspoons garlic powder
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 teaspoon dried thyme (optional)
  • For the Glaze:
    • 1/2 cup ketchup
    • 2 tablespoons brown sugar
    • 1 tablespoon Worcestershire sauce
    • 1 teaspoon mustard (yellow or Dijon)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Meat Mixture:
    • In a large mixing bowl, combine the ground beef, breadcrumbs, milk, chopped onion, chopped bell pepper (if using), eggs, Worcestershire sauce, garlic powder, salt, black pepper, and thyme.
    • Use your hands or a spoon to mix until just combined; be careful not to overmix.
  3. Shape the Meatloaf:
    • Transfer the meat mixture to a loaf pan or shape it into a loaf on a lined baking sheet. Aim for a shape that is about 2 inches high for even cooking.
  4. Prepare the Glaze:
    • In a small bowl, mix together the ketchup, brown sugar, Worcestershire sauce, and mustard.
    • Spread half of the glaze mixture over the top of the meatloaf.
  5. Bake the Meatloaf:
    • Place the meatloaf in the preheated oven and bake for 1 hour.
    • After 30 minutes, brush the remaining glaze over the meatloaf.
  6. Check for Doneness:
    • The meatloaf is done when it reaches an internal temperature of 160°F (70°C). If necessary, continue baking until it reaches the proper temperature.
  7. Rest and Serve:
    • Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing.
    • Serve with your favorite sides, such as mashed potatoes and green beans.

Tips:

  • You can add other ingredients, like grated carrots or zucchini, to the meat mixture for extra moisture and nutrition.
  • Leftover meatloaf makes great sandwiches the next day!

Enjoy your delicious homemade meatloaf!
