Ingredients:
- For the Meatloaf:
- 1 1/2 pounds ground beef (80/20 is ideal for flavor and moisture)
- 1 cup breadcrumbs (or crushed crackers)
- 1/2 cup milk
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper (optional)
- 2 large eggs
- 2 tablespoons Worcestershire sauce
- 2 teaspoons garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme (optional)
- For the Glaze:
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon mustard (yellow or Dijon)
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Prepare the Meat Mixture:
- In a large mixing bowl, combine the ground beef, breadcrumbs, milk, chopped onion, chopped bell pepper (if using), eggs, Worcestershire sauce, garlic powder, salt, black pepper, and thyme.
- Use your hands or a spoon to mix until just combined; be careful not to overmix.
- Shape the Meatloaf:
- Transfer the meat mixture to a loaf pan or shape it into a loaf on a lined baking sheet. Aim for a shape that is about 2 inches high for even cooking.
- Prepare the Glaze:
- In a small bowl, mix together the ketchup, brown sugar, Worcestershire sauce, and mustard.
- Spread half of the glaze mixture over the top of the meatloaf.
- Bake the Meatloaf:
- Place the meatloaf in the preheated oven and bake for 1 hour.
- After 30 minutes, brush the remaining glaze over the meatloaf.
- Check for Doneness:
- The meatloaf is done when it reaches an internal temperature of 160°F (70°C). If necessary, continue baking until it reaches the proper temperature.
- Rest and Serve:
- Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing.
- Serve with your favorite sides, such as mashed potatoes and green beans.
Tips:
- You can add other ingredients, like grated carrots or zucchini, to the meat mixture for extra moisture and nutrition.
- Leftover meatloaf makes great sandwiches the next day!
