PULLED PORK TACOS WITH SALSA

Ingredients:

For the Pulled Pork:

  • 2-3 pounds pork shoulder (also known as pork butt)
  • 1 onion, chopped
  • 3-4 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup chicken broth or water
  • 1 tablespoon apple cider vinegar (optional)

For the Salsa:

  • 2 cups fresh tomatoes, diced (or 1 can diced tomatoes)
  • 1/2 onion, finely chopped
  • 1-2 jalapeños, seeded and minced (optional, for heat)
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

For the Tacos:

  • Corn or flour tortillas
  • Optional toppings: avocado, shredded cheese, sour cream, lime wedges, fresh cilantro

Instructions:

Step 1: Cook the Pulled Pork

  1. Prepare the Pork: In a slow cooker, combine the chopped onion, garlic, chili powder, cumin, paprika, salt, and pepper. Place the pork shoulder on top of the spice mixture and pour in the chicken broth and apple cider vinegar.
  2. Cook: Cover and cook on low for 8-10 hours or on high for 4-6 hours until the pork is tender and easily shreds with a fork.
  3. Shred the Pork: Remove the pork from the slow cooker and shred it using two forks. Return it to the cooker to soak up the juices.

Step 2: Make the Salsa

  1. In a bowl, combine the diced tomatoes, chopped onion, jalapeños, cilantro, and lime juice. Season with salt to taste. Mix well and set aside.

Step 3: Assemble the Tacos

  1. Warm the Tortillas: Heat the corn or flour tortillas in a dry skillet over medium heat until warmed and slightly toasted.
  2. Fill the Tacos: Place a generous portion of pulled pork in each tortilla and top with fresh salsa and any additional toppings like avocado, cheese, or sour cream.

Step 4: Serve

  1. Serve the tacos with lime wedges on the side for squeezing over the top.

Tips:

  • For added flavor, marinate the pork overnight with the spices.
  • You can make the pulled pork ahead of time and reheat it when ready to serve.

Variations:

  • Spicy: Add hot sauce or extra jalapeños to the pulled pork or salsa for heat.
  • Sweet: Mix in some diced mango or pineapple with the salsa for a sweet twist.
