Ingredients:
- 4 slices of rustic or sourdough bread (toasted)
- 1 cup ricotta cheese (whole milk or part-skim, depending on preference)
- 1 cup mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
- 2-3 tablespoons honey
- Fresh mint leaves for garnish (optional)
- A pinch of sea salt
- A drizzle of olive oil (optional, for a savory twist)
Instructions:
- Toast the bread until golden and crisp.
- While the bread is toasting, prepare the ricotta. In a small bowl, stir the ricotta to make it creamy and spreadable.
- Spread a generous amount of ricotta on each slice of toast.
- Top with berries, distributing them evenly on the toast.
- Drizzle honey over the berries and ricotta, and sprinkle a small pinch of sea salt for a hint of contrast.
- Optionally, add a few fresh mint leaves on top for a burst of flavor and color.
- For a savory twist, you can add a light drizzle of olive oil over the toast.
Tips:
- Use different types of berries depending on what’s in season.
- For added crunch, sprinkle some chopped nuts like almonds or pistachios.
- This can also be a great appetizer when sliced into smaller portions.
